May I present: “there-are-currently-no-fresh-vegetables-in-the-fridge” salad aka…

pantry salad

Ingredients:

2 cans of tuna
1 can of pitted olives
1 can of lentils
1 can of corn

This is definitely a protein punch in a bowl – very filling. You can dress this with some oil and vinegar or some Greek yogurt and garlic.

And imagine what you could do if you had fresh vegetables!!!! Oh my! [insert 50 Shades of Grey flashbacks here…] Whoo hoo!

Only one lecture to power through, and then Chinese take-out and comfy things.

P.S. On an unrelated note… my calendar reads January 30th. Where the heck is the snow???
