impromptu paleo zucchini pancakes

“impromptu” = done without being planned, organized, or rehearsed…

I was going to make something with eggs this morning. This happened.

Paleo Zucchini Pancakes

Ingredients:

  • 1/2 cup egg whites (or 2 whole eggs)
  • 1/2 grated zucchini
  • 2-3 tbsp coconut flour
  • 1 tsp vanilla extract (just trust me…)
  • a pinch of salt
  • olive oil for cooking

Pour egg whites into a bowl, add vanilla extract, grated zucchini and flour. Mix well with a fork until even consistency. Place a heaping tablespoon of the mixture on a preheated frying pan with olive oil. Flatten the mixture into a pancake, using a spatula. Flip! Serve!
